LEMONY MUSHROOM AND HERB CROSTINI image

12 Baquette rounds
1 tbsp. butter, melted
1 chopped shallot
1 pkg. sliced mixed mushrooms
1 tbsp. lemon zest
1/4 cup chopped parsley
Boursin herbed cheese

Steps:

  • Toast 12 1/4 inch thick baquette slices. Melt 1 tbsp butter in a non-stick frying pan over medium high. Add 1 shallot and the mushrooms. Cook until mushrooms are soft and liquid evaporates, 3 minutes. Add 1 tbsp lemon zest and 1/4 cup chopped parsley. Spread each toast with 2 tsp. of boursin cheese. Top with mushroom mixture.
