Lemon Jello Cake image

I made this cake in the 1960's! All of us housewife's and mother's did :)) My husband, Bob was and still is a lemon guy--anything lemon he loves from chicken to dessert and anything in between!!

1 box lemon cake mix
4 eggs
3/4 c water
3/4 c oil
3 oz box lemon jello
2 c powdered sugar
1/3 c lemon juice, fresh (2 lemons)

Steps:

  • 1. Preheat oven to 325. Grease and flour glass 9x13" baking dish
  • 2. Mix together first 5 ingredients. Pour into glass dish. Bake 35 to 40 minutes.
  • 3. While cake is baking, mix together 2 cups powdered sugar with 1/3 cup lemon juice.
  • 4. Immediately upon taking cake out of oven, poke holes with a 2 tine fork (the more holes the better)Spread the lemon mixture over HOT cake.
  • 5. Cool 4 hours. Sprinkle with sifted powdered sugar.
