LEMON CRUMB BARS image

Yield 2-3 dozen bars

Number Of Ingredients 6

1 (18.5 oz) pkg. lemon or yellow cake mix
1 egg
2 c finely crushed saltine crackers
1 (14oz) can Eagle Brand sweetened condensed milk
1/2 c lemon juice
3 egg yolks

Steps:

  • 1. Preheat oven to 350. In a large bowl, combine cake mix, butter and 1 egg with mixer until crumbly. Stir in cracker crumbs. Reserve 2 cups crumb mixture and press firmly on the bottom of greased 13x9 pan. Bake 15-20 min or until golden. 2. With mixer or wire whisk, beat eagle brand, lemon juice and 3 egg yolks. Spread evenly over prepared crust and top with reserved crumb mixture. 3. Bake 20 min longer or until set and top is golden. Cool. Cut into bars and store leftovers covered in the fridge.
