Lemon Chicken and Rice in one skillet image

The original recipe came from the side of a chicken broth can. I didnt like some of the ingredients so i modified it. It is a great one dish meal. I fix boxed augratin potatoes as a side. I jack my box potatoes up by adding frozen chopped broccoli and cooked bacon.

Number Of Ingredients 11

1 pkg boneless chicken strips
2-3 clove garlic
1 onion chopped
3 Tbsp butter melted
1-2 c rice, instant and uncooked
1 c shredded carrots
1-2 Tbsp parsley flakes
1-2 can(s) chicken broth
2-3 Tbsp lemon juice concentrate
1-2 tsp lemon peel
1-2 Tbsp cornstarch

Steps:

  • 1. Cut boneless chicken strips in chunks. Put butter in large skillet to melt . Add chopped garlic, onion. Cook till chicken is done. Add the corstarch. Cook till blended. Pour in the cans of chicken broth. Stir . Add the lemon juice, lemon peel, carrots and parsely flakes. Cook till carrots are tender. Add the rice. Cook another 5-6 minutes until rice is cooked.
  • 2. As an option you can also add chopped or sliced green pepper or red, yellow or orange pepper. You could probably add broccoli too.
