Steps:
- Preheat oven to 350 degrees. Line a 13x9 pan with aluminum foil letting ends extend above pan 1-2 inches. Crust: with mixer, beat margarine, flour, & confectioners sugar until mixture holds together and forms a dough. Press evenly over bottom of prepared pan. Bake 15-20 minutes until golden & firm to touch. Filling: Beat cream cheese & sugar in lg. bowl until smooth. Add eggs, lemon peel, & lemon juice and continue beating until well blended. Pour over crust and spread evenly. Bake for 20 minutes until top is almost set. Topping: Mix sour cream, sugar, & vanilla. Carefully spread mixture over top of cheesecake. Bake 10 minutes longer. Remove pan to wire rack. Cool the refrigerate at least 4 hours before cutting into bars. Garnish with blueberries if desired.
