4 c coconut
1/4 lb butter
2 c icing sugar
1 tin Nestle Carnation Thick Cream
1 kg bag chocolate chips (start by melting half and melt more as you need)
1 or 2 T parowax
Wax paper

Steps:

  • Cream icing sugar and butter together. Add coconut and cream, mixing very well with hands. Put mixture in the fridge for 1/2 hour. Shape mixture into balls. Put back into fridge. Melt parowax in microwave (1min). Add chocolate and microwave in 30s increments until smooth. Dip coconut balls into chocolate and set on tray covered in wax paper. Put into fridge to set. Freezes well.
