LANCASTER COUNTY CHICKEN NOODLE SOUP image

4-5 lb cut up chx
onion, sliced
carrot, sliced
3 lg parsley sprigs
1T salt
1/2 t pepper
1/4 powdered saffron
wonton wrappers (for noodles)
2 med, peeled russet potatoes, thinly sliced
1/2 c chopped celery
1 t dried thyme

Steps:

  • Place chx in pot w/ next 6 ingredients. Boil then simmer partially covered about 1 hr. Remove chx, cool, then remove meat from bones. Degrease cooking liquid. Add potatoes, celery & thyme to cooking liquid about 10 min. Add noodles, cook 5 min til done. Add chx, season w/ S&P.
