LAMB AND RED PEPPER STEW image

2 tablesponns olive oil
2 pounds boneless lamb cut into 2 inch pieces
1 medium onion, chppped
1 clove garlic, chopped
3 pimientos but into strips
1 pound fresh or canned tomatoes, chopped
1 tablespoon minced parsley
1 bay leaf
Salt
Freshly ground pepper

Steps:

  • Heat the oil in a deep casserole and saute the meat until it is well gbrowned. Sprinkle with salt and pepper. Add the onion and garlic and continue cooking until the onion is wilted. Add the pimientos, tomato, parsley salt and pepper and the bay leaf. Cover and simmer 1 1/2 - 2 hours, or until the meat is tender.
