LAKSA (EASY-TO-MAKE) image

1/2 - 1 tbsp minced chili
1 tsp minced garlic
1 tsp minced ginger
1 tsp ground coriander
1 tsp turmeric
1/2 tsp brown sugar
1-inch piece lemongrass, chopped
or zest of 1/2 lemon
2 tsp fish sauce (nam pla)
or 1 tsp shrimp paste
1 tbsp peanut oil
6 cups chicken stock
4 oz Chinese egg noodles
14 fl. oz can of coconut milk
7 oz bean sprouts
6 chopped scallions
1 bunch cilantro

Steps:

  • 1. Mix together chili, garlic, ginger, coriander, turmeric, sugar, lemongrass, and fish sauce in a small bowl to form a paste. 2. Heat oil into a large saucepan over medium heat. Add paste and cook until fragrant, about 2 minutes. 3. Add stock and simmer 15 minutes. 4. Add coconut milk and simmer gently for another 10 minutes. 5. Meanwhile, prepare noodles as directed on packet. Drain. 6. Add noodles, bean sprouts, and scallions to Laksa and leave on low heat for a few more minutes to allow flavors to mingle. Serve hot.
