Ky Bourbon Popcorn image

This is a sticky, gooey adult popcorn treat to make after the kids go to bed. It combines all the flavors of a southern bourbon chocolate pecan pie into clumps of yummy popcorn!

Yield 4 quarts of popcorn, 4-6 serving(s)

Number Of Ingredients 9

4 quarts popped popcorn, nothing added. (popped in canola oil or air popped)
1/2 cup light corn syrup
1/4 cup unsweetened cocoa powder
1/2 cup sugar
1/4 cup butter
Bourbon, half-jigger
1 tablespoon vanilla
1/2 cup chopped pecans
kosher salt

Steps:

  • Preheat oven to 300*.
  • Spread popcorn on a foil lined baking sheet.
  • In a medium saucepan, stir together over medium heat the corn syrup, cocoa powder, sugar and butter. Allow to simmer lightly, then remove from heat. Stir in bourbon and vanilla, then drizzle over popcorn evenly, stirring to coat evenly. Stir in pecans, then sprinkle lightly with kosher salt.
  • Place in oven for about 5-7 minutes to dry mixture out slightly, transfer to bowl, breaking up clumps a bit, and serve!
