Steps:
- Place bacon and onions in a saute pan with enough water to barely cover. Heat and burn off water until you hear crackling and popping, about 45 minutes to an hour. Meanwhile, peel and grind potatoes in a food processor. Combine potatoes with bacon & onion mixture. Beat eggs, then add evaporated milk, melted butter and salt and pepper. Mix well. Combine egg mixture with potato mixture. Consistency should be of thick milkshake. Pour into a well greaed 9 X 13 backing pan (yes it fitsA) Bake at 350 degrees for 90 minutes. Test for doneness with a toothpick. Should come out cdlean. Freezes well.
