Key Lime Pound cake from Southern Living image

1 cup Butter
1/2 cup Shortening
3 cups sugar
6 eggs, large
3 cups flour, unbleached
1/2 teaspoon baking powder
1/8 teaspoon salt
1 teaspoon lime zest
1/4 cup Key lime juice (fresh or bottles found in mixers
1 cup powdered sugar
2 tablespoon Key lime juice
1/2 teaspoon vanilla extract
1 cup milk

Steps:

  • Beat butter and shortening at medium speed until creamy. Gradually add sugar, add eggs one at a time.
  • Stir flour, baking powder, and salt. add to butter mixture alternately beginning and ending with flour Stir in vanilla lime zest and juice
  • Pour in 12 cup bundt pan
  • Bake 1 hour 10 minutes and check with wooden stick if done.
  • Mix powdered sugar key lime juice and vanilla and pour over hot cake You can punch holes in the cake
