Key Lime Cheesecake image

I love this cheese cake for a summertime treat. Tart and tangy it is a very refreshing dessert on a hot summer day. Yum, Yum!!!!

1 1/2 c fine gram cracker crumbs
2 Tbsp sugar
2 Tbsp butter, melted and cooled
3 pkg cream cheese
1 c sour cream
3/4 c sugar
3 Tbsp flour
3 large eggs
3/4 c key lime juice
1 Tbsp vanilla
1 lime, for garnish

Steps:

  • 1. IN bowl stir together crumbs and 2 tablespoons sugar; stir the butter in well.
  • 2. Pat mixture evenly onto bottom and 1/2 way up sides of a 9-inch spring form pan.
  • 3. Bake in middle of a 375° oven for 8 minutes.
  • 4. Remove from oven and cool completely.
  • 5. In a large bowl with electric mixer beat together cream cheese and sugar until smooth.
  • 6. Beat in sour cream, flour and eggs, 1 at a time, beating well after each addition.
  • 7. Add lime juice and vanilla. (You can add some green food coloring if you wish)
  • 8. Mix until smooth and pour filling over crust.
  • 9. Bake cheese in middle of a preheated 375° oven for 15 minutes, reduce the temperature to 250° and bake for another 50 to 60 minutes more, or until center is barely set.
  • 10. Let cheesecake cool on rack and then chill overnight.
  • 11. Remove cheesecake from pan and transfer it to a cake stand. Decorate with whipped cream, fresh lime slices and or mint sprigs.
