Keto Biscuit Muffins image

Number Of Ingredients 6

1 egg
4 tablespoon(s) butter, melted
1/4 cup(s) full fat sour cream or full fat plain greek yogurt
2 teaspoon(s) baking powder
1 cup(s) almond flour
1/2 cup(s) shredded cheddar cheese, or any type of shredded cheese

Steps:

  • Preheat oven to 350 degrees.Spray either a 12 muffin tin or a 24 mini muffin tin with nostick cooking spray.
  • In a medium bowl, whisk together egg, sour cream (or greek yogurt), butter and salt. Add cheese and stir.
  • Add baking powder and almond flour and gently fold in just until combined.
  • Fill muffin tins half full.
  • Bake-14-17 minutes, or until set and light golden. Serve warm with butter! Makes 1 dozen regular and 24 minis.
