Steps:
- Preheat oven to 350 degrees.Spray either a 12 muffin tin or a 24 mini muffin tin with nostick cooking spray.
- In a medium bowl, whisk together egg, sour cream (or greek yogurt), butter and salt. Add cheese and stir.
- Add baking powder and almond flour and gently fold in just until combined.
- Fill muffin tins half full.
- Bake-14-17 minutes, or until set and light golden. Serve warm with butter! Makes 1 dozen regular and 24 minis.
