Kentucky's Chewy Chocolate Cookies image

KENTUCKY: Munch your way across the USA. Judy Dahman, the state of KY is now represented. This recipe is from "Capitol Cookies", with recipes from every state & Washington, DC. This recipe was submitted by Capital City Christian Church, Frankfort, KY, Lelia Todd, Chairperson. NOTE: This is a very stiff batter so I added in 3 to 4 tablespoons of milk and they turned out great! Very good, chewy and chocolatey.

Number Of Ingredients 10

1/4 cup(s) butter, softened
2 cup(s) granulated sugar
2 medium eggs
2 teaspoon(s) vanilla extract
2 cup(s) all purpose flour, unsifted
3/4 cup(s) cocoa powder
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
3 tablespoon(s) milk (may take 4)
1 cup(s) nuts, finely chopped (optional)

Steps:

  • Cream butter and sugar in large mixer bowl. Add in eggs, milk and vanilla and blend well.
  • Combine flour, cocoa, baking soda and salt. Blend into creamed mixture; add more milk if needed. Stir in nuts.
  • Drop by teaspoonfuls onto lightly sprayed cookie sheet. Bake at 350 for approximately 8-9 minutes. Do not overbake. Cookies will be soft. They will puff during baking and flatten upon cooling.
  • Cool on cookie sheet until set, about one minute. Remove to wire rack to cool completely.
