Kauffman Amish Bakery Fruit Cake image

This recipe was printed in an Amish Christmas Book I read.

Number Of Ingredients 8

1 1/2 c sugar
2 eggs
2 c applesauce (i used candied fruit)
or 2 cups fruit (any kind)
1/2 c oil
2 c flour
1/4 tsp salt
2 tsp baking soda

Steps:

  • 1. Mix together all ingredients and pour into a greased 9 x 13 pan.
  • 2. Bake at 350 degrees for 45 minutes.
  • 3. Icing: 1 stick butter 1/2 cup evaporated milk 3/4 cup brown sugar 1 teaspoon vanilla
  • 4. Stir together in a saucepan, then boil 5 minutes. Cool cake and cover with icing.
