Kale Curry image

Number Of Ingredients 7

1-1/2 tablespoons yellow curry paste
1 piece ginger (1-inch piece) peeled and minced
1/2 bunch kale, stems discarded and roughly chopped
1/2 cup coconut milk
1-1/2 teaspoons raw sugar (coconut palm sugar would be best)
1-1/2 teaspoons Ponzu sauce (can use soy sauce)
1 wedges lime juice (from 1/4 quarter)

Steps:

  • Heat 2 teaspoons of olive oil over medium-high heat until hot
  • Add curry paste and ginger and season with salt and pepper. Cook, stirring, 30 seconds to a minute or until fragrant.
  • Add kale and ¼ cup water. Season with salt and pepper. Cook, stirring, 2-3 minutes or until kale is wild and water has cooked off.
  • Add coconut milk, sugar and ponzu sauce. Season with salt and pepper. Cook, stirring, 1-2 minutes or until slightly thickened and heated through.
  • Turn off heat and stir lime juice.
  • Salt and pepper to taste.
