Steps:
- Heat 2 teaspoons of olive oil over medium-high heat until hot
- Add curry paste and ginger and season with salt and pepper. Cook, stirring, 30 seconds to a minute or until fragrant.
- Add kale and ¼ cup water. Season with salt and pepper. Cook, stirring, 2-3 minutes or until kale is wild and water has cooked off.
- Add coconut milk, sugar and ponzu sauce. Season with salt and pepper. Cook, stirring, 1-2 minutes or until slightly thickened and heated through.
- Turn off heat and stir lime juice.
- Salt and pepper to taste.
