KALE AND CURRANT SALAD image

Number Of Ingredients 9

1 bunch kale
1 t salt
1/4 c diced red onion
1/3 c currants
3/4 c diced apple
1/4 c olive oil
2 T apple cider vinegar
1/3 c crumbled gorgonzola cheese
1/3 c candied pecans

Steps:

  • De-stem kale. Wash and pat dry. Cut into small pieces, add salt, and massage for 2 minutes. Stir onion, currants and apple into kale. Dress with oil and vinegar. Taste for salt and vinegar, adding more to taste. Stir in cheese and top with pecans.
