KAISER ROLLS image

These are great for sandwiches, especially bacon, egg, cheese on a roll, like you get in Long Island delis

2 pkg active dry yeast
2 c water
4 tsp sugar
1/3 c vegetable oil
2 tsp salt
6- 6 1/2 6 c bread flour
1 egg white
sesame or poppy seeds

Steps:

  • 1. In a large bowl, dissolve yeast in 1/2 cup warm water.
  • 2. Add 1 tablespoon sugar; let stand for 5 minutes.
  • 3. Add the remaining warm water and sugar and 4 cups flour. Beat until smooth
  • 4. Add the oil, salt, Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top.
  • 5. Cover and let rise in a warm place until doubled, about 1 hour.
  • 6. Punch dough down. Turn onto a lightly floured surface; divide into 16 pieces. I weigh out 1 oz. pieces.I roll the dough out into a 4-5 inch rope and do a double knot. Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes.
  • 7. Beat egg white and cold water; brush over rolls. Sprinkle with poppy and/or sesame seeds.
  • 8. Bake at 400° for 15-20 minutes or until golden brown. Remove from oven and cool
