JUDY'S CHOCOLATE MUFFINS image

Number Of Ingredients 13

1 cup Oatmeal
1 cup Buttermilk
1 Egg
1/4 cup Olive Oil
1/2 tsp Salt
3 tbsp Sugar
1/2 tsp Liquid Stevia
1 cup Flour
2 tsp Baking Powder
1/4 tsp Baking Soda
Banana (1 or more, slightly aged)
1/2 cup Sweet Potato (cooked)
1/2 cup Cocoa Powder (to taste)

Steps:

  • 1. Stir buttermilk and oats in separate bowl. Let sit 15 minutes. 2. Mix egg, olive oil, salt, sugar and Stevia. Beat well. 3. In separate bowl, mix flour, baking powder, baking soda together. 4. Add the buttermilk/oatmeal mix to the egg mix. Add the banana and sweet potato. (If you use a lot of banana and sweet potato, add an extra egg.) Mix well. 5. Add the flour mixture. Beat well. Fill muffin tins about 2/3 full. Bake at 350 to 360 degrees for 40-45 mintues. Check after 20 minutes. The tops should be slightly cracked, a tester inserted should come out dry.
