JRs. Baked Clams image

24 clams, chopped
4 Tbsp butter
2 cloves garlic, chopped fine
1/2 cup onion, chopped fine
2 eggs, slightly beaten
1/2 cup Italian seasoned bread crumbs
1/4 tsp dried oregano leaves
1 Tbsp dry sherry*
2/3 cup Italian seasoned bread crumbs
4 Tbsp melted butter

Steps:

  • Wash the clams in cold running water then put them in a pot with just enough water to steam them. As soon as they start to open take them out and let them cool down to the touch. Save any water leftover into a dish if you need it later on. Remove clams from there shell saving the shells and coarsely chop up the clams.
  • In a pot put 4 Tbsp. butter and melt the butter on low heat. Add the garlic and onions and saute till onions are tender. Add the eggs, 1/2 cup bread crumbs, chopped clams and oregano to the mixture. Sprinkle the 1 Tbsp. sherry over the mixture. Mix it all up till it's well combined. If the mixture seems dry add a little water from the steamed clams.
  • Spoon the mixture into the clam shells and place the clam shells on a baking pan. In a small bowl combine the 2/3 cup seasoned bread crumbs and the 4 Tbsp. melted butter sprinkle the buttered bread crumbs over the clams.
  • Bake in a preheated 350 degrees F oven for 25 minutes or till they're golden brown.
