John Elway hambuger soup image

My son has season tickets to the Broncos and one year, the players wives published a cook book of recipes that their husbands made all the time for a fund raiser for charity. This was the one that came from John's wife back then. I'm sure he makes this today with prime cuts of beef that are not ground. (LOL)

Number Of Ingredients 14

2 to 3 pound(s) ground beef (chuck, or round, or sirloin)
2 tablespoon(s) butter
2 medium onions chopped
1 clove(s) garlic
3 can(s) beef broth
1 cup(s) 18 oz rotel diced tomatos with green chiles
1 cup(s) diced potatoes with skins on
1 cup(s) sliced carrots
1 cup(s) diced celery
1 cup(s) ranch style beans
1 cup(s) dry red wine
1 tablespoon(s) dry parsley flakes
1/2 teaspoon(s) dry basil
- salt and pepper to taste

Steps:

  • Fry the meat in a large skillet until browned and drain.
  • In a large pot, cook onions and garlic in butter.
  • Add potatoes, carrots, and celery to the onions and cook stirring for 3 minutes.
  • add the beef and all other ingredients to the pot and bring to a boil over medium heat.
  • Lower heat and simmer for 35 minutes or until vegetables are tender and serve with warm bread and butter.
  • I make this in the crock pot on low for 4 to 6 hours making sure vegetables are done but not mushey. I also add about 4 ozs of fresh sliced mushrooms.
