I AM A MIAMIAN. USE SAME PIE CRUST, BUT FOR FILLING WHISK 6 EGG YOLKS UNTIL BLENDED, ADD TWO CANS SWEETENED CONDENSED MILK, 1TEASPOON GRATED LIME ZEST, AND 1 CUP FRESH (NEVER RECONSTITUTED)KEY LIME JUICE IF AVAILABLE, IF NOT REGULAR LIMES WILL DO. LOOK FOR THE THINNEST SKINNED LIMES. BLEND WELL AND POUR INTO PIE CRUST. BAKE AT 375 DEGREES FOR 10-15 MINUTES. REFRIGERATE FOR AT LEAST 4 HOURS. SERVE WITH WHIPPED CREAM.
