Joan's Honey Orange Chicken image

This recipe is by the wonderful chef and cookbook author, Joan Nathan. I have nothing but praise for all of her recipes I've tried. This one is one of my husband's favorites and deserving of a special occasion!

Number Of Ingredients 11

2 - eggs
2 teaspoon(s) water
1 cup(s) bread crumbs or matzo meal
1 teaspoon(s) salt
1 1/4 tablespoon(s) pepper
1 1/2 - 3 pound fryers, cut up
1/2 cup(s) vegetable oil for browning chicken
1 cup(s) hot water
1 cup(s) orange juice
1/4 teaspoon(s) ground ginger
1/4 to 1/2 cup(s) honey (i find 1/4 cup to be enough.)

Steps:

  • Beat eggs with 2 teaspoons water. In a separate bowl, mix the breadcrumbs with the salt and pepper. Dip the chicken, one piece at a time, in to egg mixture, then the breadcrumb mixture. Heat the oil in a heavy skillet and brown the chicken pieces on all sides, then remove to a baking pan.
  • Heat the oven to 325 F. Mix the cup of hot water (I usually boil it first in a tea pot or in the microwave.) with the honey, orange juice and ginger.
  • Pour the sauce over the chicken. Bake uncovered in a parchment lined baking pan for 45 minutes, basting occasionally.
