Steps:
- 1. In a small bowl, whisk together the ingredients for the marinade. Place half of the marinade and all of the chicken into a large Ziploc bag and toss to coat. Marinate in the refrigerator at least 8 hours or overnight. Store the extra marinade in a covered bowl in the refrigerator. 2. Toss the mango, bell pepper, cilantro, and lime juice together in a small bowl and set aside. 3. Heat the grill to medium-high and cook the chicken for 6-7 minutes per side, or until cooked through. Baste a few times with the extra marinade while cooking. Serve warm, topped with the mango salsa.
