JERK CHICKEN WITH MANGO image

1 lb. boneless skinless chicken breasts
1 mango, peeled, pitted, and diced 1/2 red bell pepper, diced
2 tbsp cilantro, chopped
2 tsp lime juice
For the marinade:
Juice of 1/2 orange
Juice of 1 lime
1/4 cup extra virgin olive oil 2 tbsp coconut aminos
1 tbsp apple cider vinegar 1 tbsp honey
2 tsp dried thyme
2 tsp allspice
1 tsp freshly ground pepper 1 tsp ground ginger
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg

Steps:

  • 1. In a small bowl, whisk together the ingredients for the marinade. Place half of the marinade and all of the chicken into a large Ziploc bag and toss to coat. Marinate in the refrigerator at least 8 hours or overnight. Store the extra marinade in a covered bowl in the refrigerator. 2. Toss the mango, bell pepper, cilantro, and lime juice together in a small bowl and set aside. 3. Heat the grill to medium-high and cook the chicken for 6-7 minutes per side, or until cooked through. Baste a few times with the extra marinade while cooking. Serve warm, topped with the mango salsa.
