Jammin' Chicken Panini image

This is a super simple recipe with few ingredients but the combination of flavors is delish. I do choose to add my jam by dropping small spoonfuls in between the chicken because I want bursts of apricot flavor vs. spreading it on the bread. 4 - 6 oz rotisserie chicken, deboned
1 1/2 Tbsp dijon mustard
1 - 2 Tbsp apricot jam or marmalade
2 slice italian bread
1 - 2 Tbsp cranberries, dried
1 - 2 oz dofino smoked gouda cheese
butter

Steps:

  • 1. Panini grill or any other kind of grill will work too.
  • 2. Butter your bread on outside for grilling. On the other side of 1 slice spread the dijon. Add your chicken, sprinkle the cranberries on top of chicken. Then I drop the apricot jam down inside the pieces of chicken just a little here and there. Add your slices of gouda and the other slice of bread and your ready to grill.
