ITALIAN TWICE BAKED POTATO image

Number Of Ingredients 8

-2 Large Baking Potatoes
-1/3 Cup Fresh Basil (chopped)
-2 Balls Wet Mozzarella
(4 center slices set aside, remainder chopped)
-1 Package Prosciutto (chopped)
-1/2 Cup Sour Cream
-Olive Oil
-Corse Salt

Steps:

  • -Preheat Oven to 375 -Rub potatoes in olive oil and salt, place on baking tray -Bake the potatoes until soft (45 min - 1 hour depending on size -Remove potatoes, slice in half -Using a spoon, scoop out middle of potatoes, being careful not to puncture sides -Put potato insides into a mixing bowl -Add Prosciutto, chopped Mozzarella, Basil and mash -Mix in sour cream to smooth consistency -Spoon potato mixture back into potato skins -Top each with a slice of Mozzarella -Bake until Mozzarella on top is completely melted, serve hot
