1 teaspoon black pepper
4 teaspoons fennel seeds
4 teaspoons oregano
1 teaspoon garlic powder
8 lbs pork shoulder

Steps:

  • Cut the pork into 1 1/2" cubes.
  • Sprinkle combined seasoning on pork and toss to distribute.
  • Grind.
  • Shape sausage into patties.
