Italian Pork Loin Roast with Vegetables image

1 (2 pound) boneless pork loin roast
1 ½ teaspoons sea salt
1 teaspoon seasoned salt
¼ teaspoon ground black pepper
1 pound carrots - peeled, halved lengthwise, and sliced
2 stalks celery, cut into chunks
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
½ onion, cut into chunks
⅔ cup extra-virgin olive oil
¼ cup apple cider vinegar
1 ½ teaspoons dried oregano
1 teaspoon honey
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon dried thyme
¼ teaspoon dried basil
¼ teaspoon dried parsley
¼ teaspoon dry mustard
⅛ teaspoon celery seed

Steps:

  • Place pork into the bottom of a slow cooker and sprinkle with sea salt, seasoned salt, and pepper. Add carrots to the cooker around the roast followed by celery, bell peppers, and onion.
  • Combine oil, vinegar, oregano, honey, garlic powder, onion powder, thyme, basil, parsley, mustard, and celery seed in a small bowl using a whisk. Pour dressing over roast and vegetables.
  • Cover and cook until meat is no longer pink in the center and vegetables are moist and tender, 6 to 7 hours.
