Iowa Hawkeyes Black and Gold Salsa image

Round out your University of Iowa tailgate spread with this delicious make-ahead black and gold salsa.

1 can (15 oz) black beans, drained, rinsed
1 can (11 oz) whole kernel corn, drained
1 can (4.5 oz) Old El Paso™ diced green chiles
4 green onions, sliced (1/4 cup)
2 tablespoons fresh lime juice
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon ground red pepper (cayenne)
1/4 cup chopped fresh cilantro leaves
Food Should Taste Good™ multigrain tortilla chips

Steps:

  • In medium bowl, mix beans, corn, green chiles, green onions, lime juice, coriander, cumin and cayenne. Stir in cilantro.
  • Cover and refrigerate at least 1 hour to blend flavors. Serve with chips.
