Instant Pot® Strawberry Pork Roast image

A yummy strawberry pork roast for the Instant Pot®. Serve with a fan-cut strawberry on top.

½ cup brown sugar
2 teaspoons ground paprika
2 teaspoons dried rosemary, crushed
1 teaspoon ground black pepper
1 (2 pound) boneless pork loin roast
4 tablespoons olive oil
2 cups thinly sliced fresh strawberries
2 cups raspberry vinaigrette
1 bunch green onions, chopped
2 tablespoons minced garlic
2 tablespoons Worcestershire sauce
2 tablespoons cornstarch

Steps:

  • Mix brown sugar, paprika, rosemary, and pepper together. Rub the spice mixture all over the pork. Set aside.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil to the pot. When the oil is warm, sear the roast to brown, 2 to 3 minutes per side. After searing all 6 sides, turn off the Saute function, remove the roast, and scrape the bottom of the pot so as to not burn anything.
  • Place a trivet at the bottom of the pot and place the roast on top. Add strawberries, vinaigrette, green onions, garlic, and Worcestershire sauce.
  • Close and lock the lid. Select Meat/Stew function according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Let roast rest for 5 minutes.
  • Meanwhile, select Saute function. Add cornstarch and cook, stirring occasionally, until sauce is thickened, 3 to 4 minutes.
  • Pour sauce over roast. Cut and serve immediately.
