Incredible Banana Nut Bread image

This bread is moist and delicious. Everyone will want this recipe once they taste this bread.

2 c flour
1 tsp salt
2 tsp baking soda
1 tsp baking powder
1 c butter
1 c white sugar
1 c light brown sugar
4 eggs
2 c ripe bananas, mashed
1 tsp vanilla
1 c nuts, chopped
cinnamon-sugar mixture (optional)

Steps:

  • 1. Sift dry ingredients into a large bowl.
  • 2. In a separate bowl, cream butter, white sugar and brown sugar. Add eggs, one at a time, mixing after each addition. Mix in mashed bananas and vanilla.
  • 3. Mix dry ingredients into wet ingredients in 3 batches. Stir just until blended. Stir in nuts.
  • 4. Pour into 2 greased and floured 9 X5 inch loaf pans. Top with cinnamon-sugar mixture. (optional)
  • 5. Bake at 350 degrees for 55-60 minutes or until a knife inserted into the middle comes out clean.
  • 6. Cool loaves in pans on wire rack for 5-10 minutes. Turn out onto a cooling rack; cool completely. Wrap in aluminum foil when cool.
  • 7. Refrigerate the loaves for 2 hours or more before serving.
