Tuna is a staple in my pantry and we enjoy it all of the standard ways - as salad, in sandwiches, and that old standby noodle casserole. So how about something different, I thought. 1 can(s) (7 oz).water pack tuna - drained
8 oz shredded cheddar cheese
1/2 c chopped onion
1/2 c celery - sliced thin
1/2 c bisquick
1 c milk
2 eggs
1/2 tsp salt
tomato slices

Steps:

  • 1. Heat oven to 400 degrees F. Spray 9-inch glass pie plate with cooking spray.
  • 2. In small bowl, break up tuna with fork, stir in celery and onion. Spread in pie plate, then sprinkle cheese on top. For variety, you can use grated swiss instead of cheddar. Or a half 'n half mixture of the two.
  • 3. Mix Bisquick, milk, eggs and salt until smooth, then pour it over tuna mixture and cheese. Garnish with tomato slices. (A sprinkle of parsley flakes looks nice, too.)
  • 4. Bake for 25 - 30 minutes until knife inserted in center comes out clean. Let set for five minutes before you slice and serve. .A dollop of ranch dip is good as a topper.
