Yield 6 Dozen Cookies

Number Of Ingredients 8

1 lb Margarine (I use Land O'Lakes)
1 C Dark Brown Sugar
1 C Granulated White Sugar
3 Eggs
6 C Flour
1 tsp Vanilla Extract
1 tsp Baking Soda dissolved in 1 tsp water
1 C Chopped Nuts, if desired (I like to use pecans)

Steps:

  • 1. Mix ingredients in order. Add the vanilla and soda before the flour. 2. When mixed, dough will be soft. Form dough into logs. The dough will make four logs depending on length and circumference of log rolls. Use wax paper to roll and wrap dough. Lightly flouring the paper will help to ease the forming of dough logs. 3. Refrigerate overnight. Put in freezer for about 30 mins before slicing to ease slicing. 4. Slice dough about 1/4 inch thick. Bake slices on a greased cookie sheet. Smaller cookies bake for 6-7 mins. Larger cookies bake for 8-10 mins.
