Ice Cream - Prickly Pear image

We love ice cream and had an opportunity to taste this delicious treat recently. I begged for the recipe... and I will share the basic version with all of you... a truly exotic treat.

Number Of Ingredients 5

- 5 prickly pears - peeled & pureed
- 2.5 oz evaporated milk
- 10 oz heavy cream
- 1 tbsp white sugar
- 3/4 tbsp pure vanilla extract/seeds/or paste

Steps:

  • First we make a syrup: In a small pot, over medium heat, add the pear puree and the vanilla together, bring to a boil and then simmer for 15 - 20 minutes. Remove from heat; when completely cooled, place in the refrigerator for about 2 hours to chill.
  • In a large bowl add the milk and cream, mix and pour into a container with a lid and freeze for 1 hour.
  • Now carefully stir the pear syrup into the frozen cream mixture, blending well. Place back in the freezer until ready to serve. It usually tastes better the next day.
