Steps:
- Preheat oven to 350°F. Sauté onion, red and green bell pepper and garlic in olive oil over low heat until the onions are translucent. Add the tomatoes and sherry and cook until thickened. Season lightly with salt and pepper. Lightly oil six baking dishes and put some of the onion/pepper/tomato mixture in each. Gently break two eggs into each dish so that the eggs float on top. (Be careful not to break the yolks!) Place one tablespoon of butter on top of the eggs in each dish. Place the dishes in the oven and bake for 10 minutes, OR until the whites are WHITE! The yolks should be runny. Serve immediately.
