These dates stuffed with pineapple and wrapped in bacon are a great hit at parties! Also try them stuffed with gorgonzola cheese - Outstanding! I never liked dates until I tried these.

Steps:
- Take scissors or a sharp knife and make a slit on one side of the date. Stuff a piece of pineapple chunk inside the date, wrap a half slice of bacon around date and pineapple and secure with a toothpick.
- Preheat the broiler and position oven rack 6" from heat source. Broil until bacon is crisp, (time depends on how hot your broiler is, mine usually takes 10 minutes). Turn over and broil other side. Drain on paper towel. Serve warm.
- Instead of pineapple, you can also use gorgonzola cheese (I've also done this - it's wonderful!), or you can use dried apricots or fresh pear. These can be prepared a couple days ahead and refrigerated, then broil just before serving.
- I've made these several times for parties, and they're always the first to go - a BIG hit!
