Horseradish Swiss and Cheddar Pimento Cheese image

I love Pimento Cheese so I thought that I would kick the traditional recipe up a little. I hope this version does this standard southern fare justice. It's got a kick so yo can leave out the tobasco but if you don't mind a little extra pep by all means add as much as you like. I hope you enjoy this as much as I do.
