HORSERADISH-CRUSTED ROAST BEEF image

6lb sirloin tip roast (pref grass fed), tied
1/2 cup prepared horseradish
2 tblspoons kosher salt
2 tblspoons dijon mustard
2 tblspoons finely chopped parseley
1 tblspoon coarsely ground black pepper
1 tblspoon sugar
1 tblspoon sherry vinegar

Steps:

  • preheat the oven to 375 Place beef roast on the rack in a large deep roasting pan in a small bowl, blend the horseradish with the salt, mustard, parsley, pepper, sugar and sherry to form a paste. Slather the paste all over the top and sides of the meat. roast in the lower third of the oven for 2 hours until center registers 125 degrees. Transfer to a cutting board and let rest for 20 mins. discard the string and cut across the grain. Transfer to a platter and serve.
