- Mix flour, salt and pepper; sprinkle over both sides of cutlets. In a large cast-iron or other heavy skillet, heat butter over medium heat. Add pork; cook until a thermometer reads 145°, 2-3 minutes per side. Remove from pan. , Add lemon juice and honey to skillet; cook and stir over medium heat until thickened, about 3 minutes. Add pork; heat through.
