Steps:
- In a saucepan, combine butter and honey and bring to a boil for 1 minute. Remove from heat and cool. Sift together flour, baking soda, and spices, then stir dry ingredients into honey mixture. Add enough flour to make a soft dough, approximately 1/2-1 c. Wrap in waxed paper and chill. Preheat oven to 350. Roll out dough to a generous 1/8" and cut out with cookie cutter. Sprinkle with sanding sugar, if desired. Bake for 8-12 minutes or until slightly brown. Do not overbake--even when cool, cookies should be soft and chewy.
