I love a good tomato soup and wanted to make one that met the criteria for our family. I came up with this recipe and it was definitely a keeper according to the family. I hope those who try it will agree. :-)

Steps:
- 1. Place first 8 ingredients in crock pot and cook on LOW for 7 hours. Veggies will be nice and tender
- 2. Add the butter, salt and pepper. Stir and then using an immersion blender puree the soup till smooth
- 3. Add the parmesan cheese and stir well.
- 4. Add the coconut milk powder and mix once more with the blender
- 5. Check your seasonings and serve.
