- Combine half the parsley with the herb and seasonings. Rub over roast. Place in shallow pan; cover with remaining parsley. Roast, uncovered, at 325° until a thermometer reads 145°, 60-70 minutes. Remove roast from oven, tent with foil. Let stand 10 minutes before slicing.
