HERB SALAD image

Yield 4-6 servings

Number Of Ingredients 12

1/4 cup white wine vinegar
2 tsp Dijon mustard
1 tsp honey
1/2 tsp salt
1/2 tsp pepper
1/2 cup olive oil
Flat leaf parsley (3 cups)
Fresh basil (3 cups)
Fresh chives, 1 bunch chopped
Tarragon, chopped (1/2 cup)
Arugula (1 cup)
1 fennel bulb, halved, cored and thinly sliced

Steps:

  • Combine vinegar, mustard, honey, salt and pepper and whisk until mixed well. Gradually whisk in the olive oil until dressing is smooth and creamy. Combine herbs, arugula and fennel. Season with salt and pepper. Toss with dressing.
