HEAVENLY PIE image

Number Of Ingredients 13

9" or larger pie plate greased
1 cup sugar
1/4 tsp cream of tartar
4 egg whites
Custard -
4 egg yolks
1/2 cup sugar
3 tbs lemon juice
1 tbs grated lemon rind
1/8 tsp salt
1 pint heavy cream
1 can pear halves
cashew nuts

Steps:

  • Heat oven to 275 deg. Sift cream of tartar & sugar together. Beat egg whites until stiff - not dry. Add sifted ingredients slowly, beating until smooth and glossy. Line bottom and sides of pie plate. Keep center hollowed to 1/4" thickness. Don't spread meringue over rim. Bake 1 hour. Cool. Custard: Beat yolks slightly. Stir in next 4 ingred. Cook until thick (double boiler). Remove & cool. Whip 1 cup cream. Fold into mixture. Fill meringue shell. Chill for 24 hours. Just before serving, top with pears, cashews and whipped cream.
