Hearty Chili image

I've perfected this recipe over the years and everyone seems to like it. The spice mixture is easy to tweak according to taste. A can of tomato sauce and a can of beef broth can be added to thin the chili a bit if you like a soupier chili.

2 pound(s) ground beef
1 medium red onion, sliced
4 clove(s) garlic
1 tablespoon(s) fresh cilantro
1 tablespoon(s) fresh ginger
3 tablespoon(s) lemon juice
3 - serrano chiles
1 large poblano chili
1 can(s) beer
1 can(s) tomato paste, 12 ounce
1 can(s) campbell's fiesta nacho cheese soup
1 can(s) black beans
1 can(s) pinto beans
1 jar(s) salsa, 16 ounce
1 tablespoon(s) mustard, spicy brown
1 tablespoon(s) chili powder
1 tablespoon(s) cayenne pepper
1 tablespoon(s) garlic salt
1 tablespoon(s) ground cumin

Steps:

  • Add onion, garlic, lemon juice, peppers, ginger, and cilantro to food processor and process until smooth.
  • Brown ground beef in large pot. Add onion mixture. Saute for 5 minutes, stirring as needed. Add beer and stir to combine.
  • Add tomato paste, soup, and salsa to pot, stirring after each addition. Add mustard and spices.
  • Add cans of beans, stirring to combine. Taste and adjust to make sure seasoning is correct. Simmer for 10 minutes more on low heat. Serve warm.
