Healthy Heart Muffins image

These muffins are dense textured and heavy. That's not unexpected with the whole wheat, oats and bran. The sweetening is totally optional as the dried fruit may well be enough sweet for you. Let your taste be your guide.

Number Of Ingredients 12

3 - egg whites
3/4 cup(s) skim milk a low fat nut milk
1 cup(s) fat free vanilla yogurt
3/4 cup(s) applesauce, unsweetened
2 cup(s) wholemeal flour
1/2 cup(s) rolled oats (not instant)
1/2 cup(s) oat bran
1/4 cup(s) (or equivelent) dry sweetener of choice
3 teaspoon(s) baking powder
2 teaspoon(s) cinnamon
3/4 cup(s) raisins or dried cranberries
3/4 cup(s) dried apricot, diced

Steps:

  • Beat egg whites lightly. Add milk, yogurt and apple sauce.
  • In a separate bowl combine dry ingredients and dried fruit. Add liquid to dry ingredients, combine with care.
  • Spoon into prepared muffin tins. Bake 350 degrees for 20 minutes.
