Hawaiian Haupia Cake image

10 eggs, separated
1 teaspoon cream of tartar
1 1/2 cups cake flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup coconut milk or 1/4 cup fresh milk
1/4 cup water
1/2 cup vegetable oil
1 teaspoon vanilla flavoring
1 (12 ounce) can coconut milk (frozen)
2 cups milk
1/2 cup sugar
1/4 teaspoon salt
6 tablespoons cornstarch
1 1/2 teaspoons vanilla flavoring
shredded fresh coconut

Steps:

  • CAKE:.
  • Beat egg white and cream of tartar until stiff, but not dry.
  • Gradually add 1/2 cup sugar; set aside.
  • Sift rest of sugar, flour, baking powder and salt. Mix well.
  • Add egg yolks into mixture. Whip egg white mixture lightly into other mixture.
  • Use 13x9x3 pan. 350 degrees, 30-35 minutes. Cool on rack (invert) 45 minutes.
  • FROSTING AND FILLING:.
  • Combine all ingredients except coconut into saucepan.
  • Cook over moderate heat, stirring constantly, until thickened.
  • Cool.
  • Spread on Haupia Cake.
  • Sprinkle with coconut.
