HARICOT VERT SALAD image

6 very thin slices white onion
Coarse salt
1 pound haricots verts, trimmed
6 Tbsp. EVOO
2 Tbsp. Balsamic vinegar
Freshly ground pepper
1/2 pound cherry or grape tomatoes, halved
2 ounces ricotta Salata cheese, shaved

Steps:

  • *Cover onion with cold water in a small bowl, let stand 30 minutes. Drain, and pat dry with a clean kitchen towel; set aside. *Bring a large pot of water to a boil. Prepare an ice water bath; set aside. Add salt and haricots verts to pot; cook until bright green, about 2 minutes. Immediately transfer to ice water bath. Drain; set aside. Whisk together oil and vinegar in a large bowl; season with salt and pepper. Add haricots verts; toss to combine. Toss in tomatoes and onion slices. Transfer salad to a serving platter; garnish with ricotta salata, serve immediately.
