Hard Cider Battered Chicken Strips image

I was craving some fried chicken today and I like beer battered but I recently started drinking hard cider and thought wouldn't that make for an interesting kick to the batter, and boy did it. I got the most delicious and moist chicken strips ever. I was very excited about this discovery.

Number Of Ingredients 10

12 ounce(s) angry orchard hard cider apple ginger
2 large eggs
3/4 cup(s) flour
3/4 cup(s) yellow cornmeal
1 1/2 teaspoon(s) baking powder
1 teaspoon(s) salt
1 teaspoon(s) cayenne pepper
1 teaspoon(s) sugar
1 large unsplit chicken breast (whole breast)
- vegetable oil for frying

Steps:

  • Combine 2 eggs with bottle of hard cider and whisk together.
  • Then add flour, cornmeal, baking powder, salt, cayenne, and sugar. Whisk to combine. Let stand for about 30 minutes.
  • Slice chicken breast into thin strips. Place in bowl with batter after the batter has rested.
  • In a cast iron frying pan add about 2 inches of vegetable oil and heat
  • Using tongs, take strips from the bowl, letting excess batter run off, slowly place in hot oil. Put about six strips in pan. Depending on the size of your frying pan. Let brown on one side and turn over. Repeat until all strips have been cooked.
